Beef fajitas

Whole wheat tortillas and a generous helping of veggies boost the fiber and other nutrients of this meal. Starting with a leftover lean cut of steak, it’s a yummy lunch that comes together in minutes, with a balanced nutritional profile. Add a dollop of salsa to punch up the flavor even more.


Ingredients

  • 2 tsp canola oil
  • 2 cup sliced onion
  • 2 cup sliced bell peppers 
  • 20 oz steak, cooked 
  • ¼ tsp salt                                                         
  • 4 (8-inch) whole wheat flour tortillas          

Directions

Step 1:

Heat oil in a large, nonstick skillet over medium to high heat.

Step 2:

Add onion and bell pepper. Sauté for 5 minutes.

Step 3:

Add cooked sliced steak and sauté for 2– 3 minutes to warm. Sprinkle with salt.

Step 4:

Wrap tortillas in damp paper towels and microwave on high for 1 minute.

Step 5:

Put each tortilla on a plate. Divide the steak, onions, and peppers among the four tortillas.
